How To Use Chopsticks
The last thing you want to do when you eat out in or in a Chinese restaurant or home is to offend the host and hostess so it's a good idea to learn to use chopsticks the proper way. Chinese chopsticks are not sharpened at one end like Japanese ones are. You should have them both in one hand and use them to pick up a piece of food rather than dig into it. They should never be used like a fork.

When choosing that piece of food from a common bowl, you should pick up one or more pieces and transfer them to your plate. Never drop a piece of food back in and choose another. That is considered very rude. Don't dig deep into the food, but serve yourself from the top of it.

Never

allow your chopsticks to become covered with sauce, food juice or food residue. They should not be banged on anything to make a noise, waved around in the air or used as a toothpick.

When you have finished, you should lay them down horizontally on the plate rather than sticking them up vertically. This is because that would then resemble the incense sticks used for the dead.
